Adam, I put VWR springs on the MK7 this weekend and it was a breeze. For the fronts I used the 2x4 method and it worked like a charm, just remove 2 bolts and jack the strut out. Hell, you don't even need a spring compressor. Rides like stock, I would suggest going the VWR springs route.

If you use the spreader tool, it will come out easier

If you use the spreader tool, it will come out easier

Oh yeah, dur, the 2x4 is so you don't have to remove the axle bolt/the shaft from the transmission. You just remove the endlink bolt, remove the bolt that pinches the strut, use a spreader to open the slot and jack the strut out using the 2x4.
