Overheating issues.

Hi, I'm very new to the forums and the Volkswagen community. About 3 weeks ago I had to flush and replace my coolant, all went fine and I had no issues up until this weekend. The temp gauge in my mk5 Gti started rising, so I started to keep a close eye on it in the event of it hitting the red zone I would pull over and let her cool down. The weird part is it never hits the red zone it now just sits at 240F and never gets any warmer or colder. I have checked multiple times for coolant leaks and other issues and nothing came through. I then got an OBD2 reader plugged that in and tracked the coolant temp it too reads it sitting at 235-242F. Does anyone have any idea on what it could be? I was thinking the thermostat but I figured I'd ask around before I dive into a 5 hour project.
