I'd skip those ECS mounts, personally. Lots of complaints about them making noise.

Buy those dampers & then new strut mounts (OEM or TT version), strut bearings (very important to replace), and front sway bar endlinks.
Then new upper rear shock mounts & that'll be a healthy refresh.

(reuse the OEM front and rear bump stops & dust boots)

See this thread for part numbers/info:

If you don't want the slightly stiffer Febi/Bilstein TT mounts....grab these OEM supplier alternatives (for 1/2 the price of the VW labeled one):

I think those Bilsteins will be great for your wife's daily driver. I run the sportier B8's on my car and they are great.
I just did a similar refresh on my 08 Rabbit with 117k miles. I figured since it needed the work done anyway, I might as well lower it slightly. My local shop recommended the B12 Kit, which includes the Bilstein B8s and Eibach Pro Kit springs.

It handles extremely similarly to my brother's Mk6 GTI, which is to say firm, but still comfortable enough for my daily driving around OC & LA for work. It's a huge improvement from the Rabbit's stock suspension, but I think the OP will still appreciate the improvement from the worn out suspension!

OP, If you want more comfort, Tire Rack has a good deal on FSDs.

The shocks you posted will be totally fine, but DO NOT GET THOSE STRUT MOUNTS!!! I tossed the complaints on them to the wind when I did mine and figured people were just stupid, but I was wrong. Just get the OEM or TT strut mounts as mentioned earlier, make sure you get new bearings as well. I would suggest new rear strut mounts as well.
