I've been running R32 brakes on all 4 corners for some time now. With the bigger rear brakes you can run any old pad and they never seem to wear out. My rear pads are cheapo Metalmasters that have seen some 20 DE's and still have plenty of pad.

R32 calipers and rotors fit perfectly on a mkv gti?

ECS stage 3 are Boxter calipers. These are comparable to stage 5 brakes, except you have the choice of 330mm size for 17" and up wheels and 350mm size for 18" and up.

Do you know what year boxster the calipers are from?

Yes, they bolt right up. I ran them for a long while on my mkv gti. Combined with proper pads for the occasion they were a nice upgrade from stock.

I'm planning to use 17z with ML320 330mm rotors, and i'm concerned about 3 questions:

1) Does the 17z fit without spacers into the OZ Ultraleggera 18" (ET48)?
2) Will I need to grind the calipers? Or it's just needed to the 18z?
3) What exactly do I have to grind on the centering rings to fit?
